Of all the sherries that we tested, which were distinguished by their high quality were:

Fino Pavón (Fine Pavon)

A fine wine with very little colour, clean and bright, with an ethereal aroma and a taste fine and delicate, with a softness and exceptional freshness.

Fino viejo “Tres Palmas” de Gonzalez Byass (Fine old “Three Palms” Gonzalez Byass)

Really an amontillado, gold-colored and scented countersunk.

In mouth, the age and breed of the wine was perceived. Excellent.

“Dos Cortados”, un Palo Cortado de 20 años de  Williams&Humbert (“Two Cuts” from 20 years)

A fragant Sherry, aged in the solera for 20 years, which gave a beautiful amber color and a powerful aroma of walnut. Extraordinary in the mouth by its fineness and delicacy, which flavors of fig, dry and toasted. A wine collection…!

Sherry, that great unknown to the amateur at the wine table. What happened? Why not refer to Sherry, when this wine is so delicious?

Sherry is the wine of the grannies, say the youth, it was customary that in the past guests were received with a small glass of sweet sherry.

You have to know that – in addition to Sherry sweet- there are many other sherries. There are some lighter and with more body, other with different colors, from color straw to those wich its dark color looks like  tinture of iodine. There are sherry wines completly dry and without a pinch of sugar, which have little sweetness, the so-called cream sherry wine, very sweet, and those who have a high sugar content, so that you can only take a small amount. Some are fresh and serve as appetizers, others may accompany certain types of food and others are taken alone or with dessert. There is everything… even sherry wine glasses.

This week I had a Sherry tasting in which fine wines were tasted. Which I liked the most were wines that are difficult to find, even in Spain, which usually belong to special vineyards or wineries that make their wines by hand, with a very small production. And yes, all the best sherry wine is made with the Palomino grape and solera system.
