To talk about wine the first thing you will need to know is what is wine. Wine is the beverage resulting from the fermentation of the must, which is the juice of the grape. It is a natural product, it is not the result of chemistry as many people belive. Wine is made by itself; the vinter monitors that the process is carried out in the best conditions to obtain a good product.
And on what depends that a wine is good?. It depends on four factors, which are: the vine, land, climate and man. The Earth cannot be changed and neither the climate. The vine can be chosen and grown in the best conditions. The man has control over his own actions and he is essential to make good wine.
There are different species of vine, but which gives rise to the best wines is the European vine Vitis vinifera, there are many varieties and species of Vitis vinifera and in different regions of Europe, these fine grapes, the so-called noble grapes, give rise to wines with greater finesse and distinction. Although most of the wines are made with a blend of different grapes, some are made with a single variety of grape, such as the wines of Burgundy. These wines are called varietals and in them the qualities of a particular grape can be recognized. Not all varietal wines are produced with a single grape, but it is necessary that the main grape is present in a higher proportion of 75 to 85% according to the rules of the region, so that the wine is exponent of the virtues and characteristics of the noble grape.
The wine usually has a name, as Château Margaux or Richebourg, but many of the varietal wines boast with pride the name of the main grape, noble grape that gives personality to the wine and this happens in several regions such as Alsace or California. So we have the name of the wine may be Cabernet sauvignon, Pinot noir or Chardonnay or Merlot. In Mexico, very good wines are being produced and the best also bear the name of the grape that gives rise to them and therefore are varietal wines. Thus we have L.A. Cetto Petit Syrah or Cabernet Sauvignon from Bodegas de Santo Tomas.
Wine needs to be well maintained because it is a living organism. Meaning that wine is born with the fermentation, grows and develops in oak casks, in bottle follows transforming and after a while, wine, like the man, loses gradually its qualities until it is decrepit and dies. If we know how to take care of it, it will be on a better condition, lasting more time. How should we take care of it? First, getting it from places who know how to treat the wine, . After purchased, put it in the more remote location of your House, in a closet or under the stairs, so it will stay still, at rest, away from light and fragnant substances that may be added to wine, such as petrol and white spirit, paint, thinner, etc. The vibrations also spoil wine, such as those produced by machinery and other artifacts. Bottles must remain lying down so that the wine is in contact with the Cork that will remain expanded by moisture and will stop air getting into the bottle; air is the worst enemy of wine because it produces an oxidation which will accelerate the development of the wine, shortening its existence.
There is no better companion for a good meal than good wine and good wines are available to anyone. They don’t have to be the most expensive, they only have to be properly made.
